Basic Pancakes

Basic Pancakes | Rating: 4/5 | Difficulty: Easy

These basic pancakes are a cheap and tasty breakfast, lunch or dinner! There are other variations at the bottom.

Makes: 10. Prep Time: 5-10 mins. Cook Time: 10 mins.

Ingredients:

1 cup flour
1 egg
1 cup milk
1 tsp butter

Method:

1. Mix flour and egg, then slowly add the milk until a smooth paste.
2. Scoop about 1/8 cup of batter and tip onto a hot frying pan with butter/margarine.
3. Fry for about 2 minutes or until the bottom is golden brown. Then flip and cook for a further 1 minute. Repeat for remaining batter, then serve.

Buttermilk Pancakes |  Rating: 5/5 | Difficulty: Medium

Makes: 5. Prep Time: 10 mins. Cook Time: 15 mins.

Ingredients:

1 cup self-raising flour (or add 2 tsp baking powder to 1 cup
1/2 cup castor sugar
1 egg
(2 tbsp vegetable oil (optional but recommended))
1 cup buttermilk (see our buttermilk recipe, or simply add 1 tsp vinegar to 1 cup normal milk)
1 tsp butter

Method:

1. Mix the flour, sugar and egg together.
2. When a thick mixture, tip in the oil and milk, then stir until a smooth yet thick batter.
3. Scoop 1/4 cup of batter, then tip on a hot pan with butter/margarine.
4. Cook for about 3 mins, or until golden brown on the bottom, and risen about 1 or 2 cm.
5. When cooked on the bottom, flip and cook for a further 2 mins, or until same on either side.
6. Serve!
