Custard, from scratch? | Rating: 4/5 | Difficulty: Hard

Ever been about to make custard, for you or for tarts, but there's little/no powder? Fear not, for we have a solution! And use up your almost bad milk.

Serves: 4. Prep Time: <30mins. Cook Time: 20 mins. 

1: Making custard with not enough powder.

I get you can cook it on a smaller scale, but that's simply not enough!

Ingredients: 

(For every cup of milk without custard powder, use 1 egg yolk, 1 tsp cornflour, plus 1/4 tsp vanilla essence.)

Remaining custard powder, (1 tbsp for each cup of milk)
2 cups milk
(Number of cups of milk without powder) Egg yolks
(Number of cups of milk without powder) tsp vanilla essence
3 tbsp sugar (or to taste)


 Method: 

1. Tip milk in a saucepan with custard powder, cornflour, egg, and essence, then whisk.
2. Slowly heat the pan to a boil, stirring constantly so as to prevent burning or lumps.
3. Once the custard is at the desired consistency, turn the heat off and serve.

2: Making custard from scratch.

Ingredients: 

2 cups (500 mls) milk
1 vanilla pod (or 1-3 tsp vanilla essence)
2 egg yolks
3 tbsp sugar
2 tsp cornflour

 Method: 

1. Tip milk in a saucepan with the vanilla and bring to a boil.
2. Mix together the egg, sugar, and cornflour to form a paste.
3. Mix the milk into the paste, then strain into the saucepan.
4. Stir the custard until it thickens to the desired consistency.
