Jam Drops

These biscuits are really easy to make, and you can use any plain biscuit base. 

Makes: 25. Prep Time: 30 mins. Cook Time: 20 mins. 


 Ingredients:

130g butter (softened)
1/2 cup castor sugar
1/4 tsp vanilla extract
1 large egg
2 tbsp cornflour
3 tbsp SR flour (or 3 tbsp plain flour & 1/2 tsp baking powder)
1 cup plain flour
Jam

 Method:

 1. Beat butter and sugar until pale and creamy.
2. Add egg to butter and mix in.
3. Add flours and mix until combined.
4. Refrigerate for 20 minutes, until dough is firm.
5. Roll mixture into 25 balls, then make an indent with your thumb.
6. Fill hole with about 1/2 tsp of jam. then bake for 20 minutes or until pale gold in a 170°C oven.

Note: DO NOT eat while hot as jam will burn.
