Homemade Nachos

Nachos made from scratch on the stove, perfect for movies and get-togethers! You're welcome in advance!

Makes: 12 serves. Prep Time: 12 mins. Cook Time: 12 mins. 


Ingredients
  • 30g butter
  • 2 large onions, finely chopped
  • 2 cloves garlic, crushed
  • 1/2 tsp chilli powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 400g can chopped tomatoes
  • 465g can kidney beans, rinsed
  • 2 tbsp tomato paste
  • 1 tsp brown sugar
  • Corn chips
  • Grated cheese
  • Guacamole, sour cream
Directions

1: Melt butter, add onions, garlic, chilli, paprika and cumin.
2: Cook 2-3 minutes. Drain tomatoes, reserving 1/4 cup of juice.
3: Add tomatoes, juice, beans, tomato paste and brown sugar.
4: Continue cooking until thick - about 5 minutes.
5: Arrange corn chips on plate, sprinkle with half cheese, add sauce, cover with remaining cheese and bake in moderate oven (180) for 15 mins to melt cheese or arrange in bowl and microwave it for 1 minute until cheese is melted. Garnish with guacamole and sour cream.

Note:

You can blend the sauce before serving, according to preference.
